With all the things we've had going on it occurred to me that I have forgotten to share that on August 2nd I will be teaching my last class and will be retiring. I have been blessed to have been able to spend  40+ years doing something that I love and has taken me on an amazing journey around the globe and have made some wonderful friends. It's time to start the next chapter.

It has been amazing watching, teaching, and playing a small part in the development of these future chefs.

Congrats John, enjoy it I'm sure you worked very hard to get to the point where you can stop working and enjoy.  We are at opposite ends of our lives - I am 33 with 2 young kids and we are looking for our first house - I hope to one day be able to retire and enjoy what I've worked for.

Thanks Tom. I know great things are ahead for you and your family. We are truly excited to start this new chapter. I miss the restaurant business very much but 40 years of concrete floors raise hell with your knees. I think i will miss the way the students eyes light up when they learn something.

Congrats, more time to smoke cigars.
I am not concerned about what you think as I can tell you don't do it often.
